Organic Orange Glazed Herb Roast Whole Chicken

I absolutely love roasting a chicken and so will you. It’s easy and you can make many meals out of this baby. I suggest roasting chicken enjoying and save the bones to make a wonderful bone broth.

This broth can be cooked in a crock or insta pot and kids love noodles and soup or use the broth for cooking rice. I buy an organic chicken and Local whenever possible. Splurge on the chicken since you can literally get 8 meals from it. The roast chicken will feed four people and the soup can get up to 6 large servings.

Instructions
  1. Preheat oven to 425 degrees.
  2. Wash and pat dry chicken.
  3. Stuff cavity of chicken with herbs + garlic + lemon.
  4. Place on a roasting rack to cook.
  5. Tie legs with kitchen twine breast side up. Season chicken with seasonings above.
  6. Cook for two and half hours total.
  7. Halfway through cooking add melted butter & orange marmalade to the top of chicken. Microwave butter and jam or you can reduce on the stove top before applying to chicken.
  8. Cover the chicken just top with foil if it is browning too much.
  9. Check chicken after an hour and half. Chicken is complete when you can easily move the leg.
Recipe Notes

Serve on a large platter whole with roasted or mashed potatoes & a green vegetable. Delicious!
