Grilled Pineapple Salsa

Ingredients
- 1Whole Pineapple or 6 Rings Sliced
- 1/2Bunch Organic Cilantro
- 1/2 Red Onion
- 10 Cherry Tomates Diced
- 1 Lime
- 1 Jalapeno
- 1Clove garlic
- 1/2Tsp Sea Salt
- 1/2Tsp Cracked Pepper
- 2Leaves Mint Chopped(Optional)
Instructions
- Heat up your grill on high. Brush grill or grill pan with olive or grapeseed oil.
- Lower grill to medium heat when grilling pineapple 3-4 minutes on each side until appears bright yellow and soft. Don’t over grill because it can get too soft in texture.
- While pineapple is cooking. In a medium bowl place chopped garlic + chopped cilantro + chopped onion + chopped jalepeno & mix.
- Squeeze fresh juice of lime + add 1/2 of salt & cracked pepper. You can add more salt if you'd like to.
- After pineapple is cooled chop in small pieces and add to salsa mixture. Mix well.
